  8. Make ready 1 star anise
  9. Make ready 2 cardamoms

  11. Make ready 3 green chillies whole
  12. Get 2.5 tbsp ghee
  13. Make ready 1 tbsp lemon juice
  14. Take Few coriander leaves
  15. Take Few Mint leaves
  16. Get as per taste Salt
  17. Get For Chicken stew
  18. Make ready 1/4 kg chicken
  19. Take 1 med sized potato cut into chunks
  20. Make ready 1 small carrot cut into thick 2"pieces
  21. Take 5-6 beans cut into 2" pieces
  22. Get 1 onion
  23. Prepare 1 tsp finely chopped ginger
  24. Take 4 green chillies slit
  25. Take 2 tbsp coarsely powdered pepper
  26. Prepare 3-4 cloves
  27. Take 2 "cinnamon
  28. Make ready 1 Star anise
  29. Make ready 1 bay leaf
  30. Make ready 1.5 cup thick coconut milk
  31. Prepare 1 tsp lemon juice
  32. Make ready 1 sprig curry leaf
  33. Make ready 1 tbsp coconut oil
  34. Make ready 1 pinch garam masala powder

Ghee rice is a flavorful dish prepared with ghee, rice and other spices. Now add the drained rice and fry for a few minutes, so that the rice is well coated with the ghee. Yummy rice. i love this with chicken. or anything. it tastes so good by itself. This stew is based on the savory rice porridge congee, which has roots in Chinese, Thai, and Korean cuisines.

Steps to make Ghee rice and chicken stew:
  1. Ghee rice: Heat ghee in a pressure cooker and tip in all the whole spices and saute till aromatic then add sliced onions and saute till it starts turning golden here and there,then add water and bring it to a boil by adding enough salt and few coriander leaves, mint leaves and whole green chillies, once boiled tip in rice then add lemon juice and mix thoroughly. Close the lid of the pressure cooker and cook for 2 whistles, once the pressure releases mix everything together and serve.
  2. Chicken stew: Pressure cook chicken, potatoes, carrots and beans by adding 1tsp pepper powder,green chillies,ginger, curry leaves,salt and sufficient water for 2whistles.In an another pan heat oil, add whole spices and bay leaf and saute till aromatic,add sliced onions and saute till golden brown,add the pressure cooked chicken and veggies along with its water and cook covered for 2mins for the flavors of the masala and onions to penetrate into the chicken.
  3. Now add coconut milk and remaining pepper powder and cook till the gravy becomes thick and creamy.lastly sprinkle a pinch of garam masala powder and swicth off the flame and the stew is ready to be served.
  4. Served ghee rice and stew with cucumber raita, pickle and pappadam.
