  1. Get 3 Cups wheat flour
  2. Make ready 1 tbsp oil for wheat flour dough
  3. Get 1/2 cup ghee for chapatis
  4. Get As required Water for dough
  5. Make ready 3 tbsp carom seeds
  6. Get as per taste Salt
  7. Get as per taste Red chilli powder
  8. Get 1 tbsp cumin powder
  9. Get 1 large bowl grated (3-4 radish)
  10. Get handful freshly chopped coriander leaves
  11. Take Handful chopped radish leaves
  12. Take For sweet yoghurt lassi:
  13. Make ready 2 large tbsp yoghurt
  14. Make ready 3 tbsp grinded sugar
  15. Get 1/2 tbsp white butter

Instead of making routine stuffed parathas, here the radish mix is spread on a semi-cooked roti, which is then folded in half and cooked. Radish is not one of my favorite vegetable because of its strong flavour and aroma. But I love it when it is added in sambar which amma does often. The first step in this is to toss the grated radish with some turmeric and salt.

Instructions to make Punjabi paratha thali(radish layered paratha, Yoghurt lassi):
  1. Very important point to note: take a bowl of radish add 1 tbps salt, mix and leave for 1 minute. Now squeeze the water from grated radish to fix the paratha well.
  2. Now in a bowl add this grated radish, chopped leaves of radish, chopped coriander leaves, 1 tbsp cumin powder, salt as per taste, red chilli powder as per taste, 1 tbsp carom seed. Mix well. Paratha stuffing is ready.
  3. Now in another bowl add 3 cup wheat flour, 1 tbsp carom seed, 1 tbsp oil and 1/2 cup water. Knead a smooth dough, if required you can add more water to knead a dough.
  4. Now take two equal small balls of dough and roll in chapati form. On one chapati add paratha stuffing and put other chapati on it and press all sides evenly and roll slightly to make even chapati shape.
  5. Now take a tawa. Keep it at medium flame. Put this chapati on tawa when slightly cook from one side spread ghee evenly all over and turn the side do same with other side. Radish paratha is ready to serve.
  6. Now in a mixer jar add 2 large tbsp of yoghurt and grinded sugar as per taste. And grind, if required just add very little water. Take out in the glass. Add 1/tbps white butter. Lassi is ready to serve.
  7. Radish layered paratha is ready to serve with lassi, Papad, chutney, pickle, butter and onion rings.
