  6. Prepare 1 large Tomato, finely chopped (approx. 1/2 cup)
  7. Make ready 1 inch Ginger, finely chopped
  8. Make ready 4/5 cloves garlic
  9. Take 2 Green Chillies
  10. Prepare 2 tablespoons Oil
  11. Prepare 1/4 teaspoon Mustard Seeds (rai)
  12. Make ready 1/2 teaspoon Cumin Seeds (jeera)
  13. Prepare 2 pinches asafoetida (hing)
  14. Prepare 1 small bay leaf
  15. Prepare 1 Small piece of cinnamon stick
  16. Take 2 teaspoons Cumin-Coriander Powder (dhania-jeera powder)
  17. Make ready 3/4 teaspoon Red Chilli Powder (lal mirch)
  18. Get 1/2 teaspoon Turmeric Powder (haldi)
  19. Take 2 tablespoons Coriander Leaves, finely chopped
  20. Take 1/2 teaspoon garam masala powder
  21. Make ready as per taste Salt
  22. Prepare 3/4 cup Water
  23. Get For Palak-puri-
  24. Prepare 3 cups whole wheat flour
  25. Get 1/2 teaspoon carom seeds (ajwain)
  26. Make ready 1 pinch asafoetida (hing)
  27. Get 1/4-1/3 cup water or add as required
  28. Get 2 tablespoons oil for deep frying, as required
  29. Make ready 100 grams palak
  30. Make ready 3 cups which is boiled and grinded
Instructions to make Palak Puri with yummy Allu-Mattar-paneer curry/ sabzi 😊:
  1. To begin making the Aloo Matar Sabzi Recipe, prep all the ingredients and keep them aside. Boil potatoes and peel them, mash them roughly, chopped spring onion, tomato, cut cubes of paneer.
  2. Heat a tablespoon of oil in a pressure cooker; add asafoetida (hing) mustard seeds, cumin seeds and allow it to crackle. Once the cumin seeds crackleΒ ,add bay leaf, cinnamon stick let saute them 30 secs.
  3. Add spring onions and ginger, garlic, chilli and saute on low heat until the onions soften.
  4. Once the onions soften, add theΒ tomato, and cook the tomatoes for two to three minutes.
  5. Once the tomatoes have softened add turmeric powder, coriander powder,garam masala powder, salt and chilli powder and stir well. Add 1/2 a cup of water. And cook the gravy until oil ozees out.
  6. Add the peas-mattar in the gravy and for few seconds saute it.
  7. Add then add boiled and roughly mashed potatoes into the pressure cooker. Mix it well.
  8. Now add paneer cubes and mix it well in gravy and saute it for 1 minute.
  9. Add 1/2 cup of water and stir well the veggies with masala.
  10. Cover the pressure cooker and allow the Aloo-Matar-paneer Sabzi to cook for 3 to 4 whistles and turn off the heat.
  11. Once the pressure has released, open the cooker and give the Aloo Matar Sabzi a stir. Adjust the consistency of the sabzi, by adding little water if required and post that check the salt and spices and adjust according to taste.
  12. Transfer the Aloo Matar Sabzi to a serving bowl, stir in the chopped coriander leaves and serve hot.
  13. For palak-puri Take 3cups whole wheat flour in a pan or mixing bowl. Also add Β½ teaspoon carom seeds (ajwain), 1 pinch asafoetida (hing) and salt as per taste.
  14. Add mashed, boiled Palak in flour.Adding water in parts knead to a semi-soft dough. Cover and keep aside for 10 minutes.
  15. Make dough small balls in equal part roll it into 4-5 inches Puri.
  16. Heat oil in a pan or kadai. Check the oil temperature by adding a tiny piece of dough in it. If it comes steadily and gradually on top, the oil is medium hot and ready for the poori to be fried. Fry the Palak Puri with golden brown colour
  17. Serve palak puri with allu-matar-Paneer curry/sabzi yummy yummy… Surely you will love it… It's my all time favourite 😍
